best friend, graduation and festival of lights

So this week was a pretty sweet one! on sunday we went down to metz to visit my best friend pauline and her family, which was actually pretty sweet cuz church was cancelled here in lux. so we made it to church and had a blast there!
On monday we came back to luxembourg and something very interesting happened! i went to the doctors and she asked me this:
'is your skin usually lighter than it is now??'
me: 'eeehm... no! this is light! i havent seen the sun (the one that makes u get tanned and not the luxembourg sun) in 2 years, so this is almost the lightest it can be'
 the doctor: ' oh well its too dark for what i was thinking'
O.o what the holy guacamole???????? i'd NEVE EVER heard someone say this to me!!!!!!!!
....

I officialy graduated on tuesday! =) so 'prom' in europe is different than prom in the states! plus i didnt stay for prom cuz i went to a chinese restaurant (very fancy) with my mom, pauline and the nanny i had when i was a child =) it was amazing =D

pauline left luxembourg on wednesday and i went to hers on friday because we went down to nancy to see the festival of lights( and of course i forgot to take pictures)

Shredded spinach & ham risotto

As you can see i have been into cooking so here is a yummy recipe i tried a couple of days ago:

You need (serves 4) :
*3cups fresh young spinach leaves
*4oz (115gr) cooked ham
*4cups chicken stock
*1 tbsp olive oil
*3tbsp butter
*1small onion, finely chopped
*1 3/8 cups risotto rice
*2/3 cup water
*1/4 cup light cream
*3/4cup freshly grated Parmesan or Grana Padano cheese
*salt & pepper

Wash spinach well and slice into thin shreds. Cut the ham into thin strips. Bring the stock to a boil in pan, then reduce the heat and keep simmering gently over low heat while you are cooking risotto.

Heat oil with 2 tablespoons of butter in a deep pan over medium heat until the butter has melted. Add the onion and cook, stirring occasionally, for 5mins, or until soft and starting to turn golden. Do not brown.

Reduce the heat, add the rice and mix to coat in oil and butter. Cook, stirring constantly, for 2-3mins, or until the grains are translucent.

Add the water and cook, stirring constantly for 1min until reduced.

gradually add the hot stock, a ladleful at a time. stir constantly and add more liquid as the rice absorbs the liquid. increase the heat to medium so that the liquid bubbles. cook for 20mins, or until all the liquid is absorbed and the rice is creamy. ass the spinach and ham with the last ladleful of stock.

Remove from heat and add the remaining butter and the cream. mix well, then stir in the parmesan until it melts. season to taste and serve at once.

Bon appétit =)

Tiramisu

So this is a recipe for a yummy tiramisu without coffee and without alcohol!

You need

* 3 eggs
* 100gr of sugar
* 1 package vanilla sugar (??)
* 250gr of mascarpone
* 24 biscuits (see picture)
* 1/2liter of fake coffee
* 30gr of cocoa

Separate the whites from the egg yolks. Mix the yolks with the sugars.
Add mascarpone with a whip. Beat the egg whites until stiff and add them delicately to the previous mixture.

Prepare some "fake" coffee.
Dip the biscuits in the 'coffee'(one by one). Put dipped biscuits in the bottom of a baking pan.
Put a layer of creme. Then some cocoa. Do this until the baking pan is full.

Put in the fridge for 4hours.

Enjoy some good tiramisu

Yummy Chicken Enchiladas

Tonight we had the Elders over (elder maldonado and elder karratti) and i decided to make some chicken enchiladas! of course, i forgot to take pictures but i'm still going to share the recipe:

You need:
* 1 package of flour tortillas
* (2-3) tablets of chicken broth
* 3 lb of chicken (breast)
* 7 tubs (20cl) of creme fraiche
1 lbs of cheddar (or mimolette) cheese and emmental
* Green chilé (depends on how spicy you want it)

Cook or bake chicken thoroughly.
Then cut the chicken into bite-size pieces. Mix the creme fraiche, 1/2 of cheese and chilé together (chilé must be cut into very small pieces before mixed in).
The tablets of chicken broth must be turned into paste.
Once turned into paste add it to the mixture.
Divide mixture in half and add chicken to one of the mixtures. Roll mixture in tortillas, place in large baking pan. Cover tortillas with remaining half of mixture and top with remaining cheese.

Bake in the oven at 180°C for 15-20minutes.

have it with some guacamole =D
YUMMY!!!!

So i realize that this has some Frenglish parts but that is the way the missionary gave it to me so if you have to be mad at someone be mad at that weird elder. =D

Bon appétit

Hello life

Hey world! It's been a while since I've posted something on my blog! Yeah I had finals this month and I basically studied, ate and slept the whole month. That's all I did. But finals are finally over and I started having a life again, somehow...
I decided to scrapbook again and to sew a lot and to post more things on my blog =) we'll see how that turns out!

So the day of my last exam the sister missionaries came over and we had a Jammie-party (as it was their preparation day or pleasure day, as some might call it)
